This is a really delicious seasoning.
There are two types, shio koji and shoyu koji, which are traditional Japanese seasonings made by mixing rice koji, salt or soy sauce, and water and fermenting them.


This is shio koji.
Find a koji that suits your taste with salt and soy sauce.
I prefer soy sauce koji though.


✅ How to use koji

It's easy to make.
Just spread shio koji or soy sauce koji on your favorite ingredients and leave them in the refrigerator for a few hours.
If possible, leave it overnight.

Then just grill the ingredients.
Steaming is also fine.

Just doing this will dramatically improve the taste of your ingredients.


Dishes using koji

This chicken was really popular at my restaurant.
It's easy to prepare.
I just brush the chicken with shio koji the day before and bake it the next day when an order comes in.
And yet it was so popular.

This pork will make you want to drink rice and beer.

This was also a big seller at my restaurant.

Of course, it's not just meat that tastes amazing,fish tastes amazing too.

It's delicious grilled in a frying pan, but grilling it over charcoal makes it so delicious it's out of this world.


If it's such a delicious seasoning, why isn't it more famous?

Koji wasn't very well known until now.
I myself only learned about koji about 7 or 8 years ago.
But recently, koji has become known to more people, and it has become a seasoning that is easily found in supermarkets and other places.

I'm sure koji will become a seasoning loved by even more people.

So why not try using shio koji and soy sauce koji to raise the level of your dining table by two notches!
