Zaru Soba with Chikuwa Tempura | ざるそば+ちくわ天

Traditional Japanese Zaru Soba (cold buckwheat noodles) topped with a big Chikuwa tempura at Kanoya in Shimbashi, Tokyo.

Many customers seem to order hot soba rather than zaru soba, which makes sense because the aroma of the warm dashi broth drifts outside the shop and really makes you hungry.

Personally, though, I prefer the combination of zaru soba and tempura here.

Taking a bite of the cold soba, then a bite of crispy tempura, and alternating between the two makes for a really satisfying combination.

Shrimp Tempura Rice Bowl & Hot Udon | 海老天丼+温かいうどん

Japanese Udon noodle soup and Ebiten Don (shrimp tempura bowl) combo set at Kanoya in Shimbashi, Tokyo.

The soba is good, but the udon is also surprisingly tasty.

Whenever I order udon here, I always end up adding several toppings. The toppings are inexpensive, so I figure I might as well try a few different ones.

The udon broth is pretty good too, with a light and comforting flavor that works well with all the extra toppings.

The shop opens early in the morning, so it can get quite busy during breakfast hours.

Even so, the service is extremely fast. After buying your meal ticket and joining the line, your order is often ready by the time it is your turn.

So even when the shop looks crowded, you usually do not need to worry too much about how long it will take.
