Mugi to Olive Ginza is best known for its distinctive ramen featuring hamaguri clams, a relatively unusual ingredient in Tokyo ramen.

The broth brings together the deep umami of hamaguri clams with the richness of chicken and other savory ingredients, creating a flavorful and well-balanced bowl.

Mugi to Olive was also selected as a Bib Gourmand restaurant in the MICHELIN Guide Tokyo, helping establish its reputation as one of Ginza’s popular ramen shops. Lines are common, especially during busy hours.

Chicken Soba | 鶏SOBA

Chicken Soba ramen at Mugi to Olive Ginza in Tokyo, topped with chicken chashu, mitsuba, nori and kamaboko.

Most customers seem to order the hamaguri clam ramen, and there is already plenty of information about it online, so I decided to feature the Chicken Soba instead.

I personally prefer the Chicken Soba as well(lol)

The presentation is elegant, but it is not just about looks. The toppings, broth, and noodles all have a refined flavor that matches the beautiful appearance.

The broth brings out plenty of rich chicken umami without feeling too heavy.

The noodles are also excellent, with a pleasant aroma and a firm, satisfying bite. Overall, it is a very well-balanced bowl with little to fault.

including the use of olive oil and carefully prepared toppings. Mugi to Olive was already a popular ramen shop, but its selection in the MICHELIN Guide helped bring even more attention. Today, long lines are common, so it is better to visit with plenty of time.
