Shimbashi is home to many popular ramen shops, and Tori no Toriko is one of the newer names attracting attention.

The shop is produced by Menya Sugo, a popular tsukemen shop in Shimbashi, and focuses on rich chicken-based ramen.

Personally, I like that it does not feel like just another standard chicken paitan shop. Small touches such as ginger foam and carefully chosen toppings give the ramen a playful and distinctive character.

Special White Tori no Toriko | 特製 白のとりこ

Shiro Zenbu Nose ramen at Tori no Toriko in Shimbashi, Tokyo, topped with pork and chicken chashu, seasoned egg, nori and green onions.

Tori no Toriko offers two main ramen styles, and the “White” bowl combines rich chicken umami with deeper seafood flavors.

According to the explanation inside the restaurant, the foam floating on top of the soup is made with a blend of ginger and vinegar. It adds a light accent to the rich broth while bringing out even more flavor.

You can also tell that the toppings are prepared with care, giving the whole bowl a refined finish.

Despite the richness, the overall taste is gentle and easy to enjoy, making it approachable even for people who prefer lighter ramen.

Special Red Tori no Toriko | 特製 赤のとりこ

Aka Zenbu Nose ramen at Tori no Toriko in Shimbashi, Tokyo, topped with pork and chicken chashu, seasoned egg, green onions and menma.

The “Red” bowl adds spiced minced meat and homemade chili oil to the rich chicken-based soup, giving it a completely different character from the White version.

It may look quite spicy at first, but the heat is actually fairly mild.

Rather than strong spiciness, the deeper umami and savory flavors stand out more, making it easy to enjoy even if you are not looking for an especially hot bowl of ramen.

If you cannot decide between the White and Red bowls, I honestly recommend trying both on different visits.

The White has a gentle richness with chicken and seafood umami, while the Red adds another layer of flavor with spiced minced meat and homemade chili oil.

Both have their own character, and it is fun to compare them and find out which one you prefer.

Even though the soup is rich, it never feels overly heavy, so Tori no Toriko is an easy place to recommend if you are looking for a flavorful chicken ramen in Shimbashi.
