Tonkotsu Broth Simmered for 10 Hours and Aged for a Full Day

Gatton specializes in Kyushu-style tonkotsu ramen made with a deeply flavored pork-bone broth.

According to the restaurant, more than ten types of domestic pork bones are simmered for around 10 hours in a large traditional-style kettle, then the soup is aged for an additional day to develop even more depth and richness.

The ramen is served with specially made extra-thin noodles, and you can choose from several levels of noodle firmness, including katame, barikata, harigane and konaotoshi.

Located inside Tokyo Ramen Yokocho near Tokyo Station, Gatton is an easy place to experience a classic, concentrated style of Japanese tonkotsu ramen.

Ramen | ラーメン

Tonkotsu ramen with chashu, green onions and nori at Gatton Tokyo Ramen Street

This ramen is very easy to enjoy and simply tastes good.

The soup has no strong pork smell and does not feel too heavy, yet it still has plenty of depth and the natural umami of tonkotsu.

Combined with the extra-thin noodles, the ramen goes down very smoothly and is easy to keep eating.

Noodle firmness is a matter of personal preference, but if you are not sure where to start, I would recommend trying “katame,” which is just one step firmer than the standard texture.

Negi Rice | ネギ飯

Negi rice topped with pork, green onions and shredded nori at Gatton Tokyo Ramen Street

The Negi Rice comes with plenty of green onions and a small amount of chashu.

The sauce poured over the rice is surprisingly flavorful and makes it very easy to keep eating.

Kaedama is always a good option with tonkotsu ramen, but pairing the ramen with this Negi Rice is another great way to leave completely satisfied.

Gatton opens early in the morning, so it is also a convenient option for breakfast near Tokyo Station.

Because the ramen is tasty and the location is convenient, it can get a little busy with commuters before work.

Still, the turnover is usually fairly quick, making it an easy place to stop by for a satisfying bowl of tonkotsu ramen.
