Tokyo Niboshi Ramen Gyoku is one of the ramen shops located inside Tokyo Ramen Street at Tokyo Station.
The shop specializes in rich niboshi ramen, combining a concentrated chicken-based broth with several kinds of dried sardines.
The result is a deeply savory bowl with strong umami, while still keeping the distinctive aroma and character of niboshi.
It is a good choice if you want to try a richer style of niboshi ramen while visiting Tokyo Station.

▶ What I Tried
Chuka Soba | 中華そば

The classic Chuka Soba has a light and clean broth with a clear aroma of niboshi.
Personally, I can also notice a slight bitterness from the dried sardines.
It is subtle, and some people may actually enjoy that extra edge as part of the character of the soup.
Rich Torori Soba | 濃厚とろりそば

As the name suggests, the Rich Torori Soba has a much deeper and more concentrated flavor.
The strong aroma of niboshi is combined with rich animal-based umami, creating an even more powerful and satisfying broth.
Most customers seem to order this version, and personally, I also prefer the Rich Torori Soba.
The ramen also pairs perfectly with the Aburi Chashu Rice Bowl from the side menu.
The savory grilled chashu and rice work especially well with the rich niboshi broth, making the combination even more satisfying.
▶ Final Thoughts
Another advantage is that the shop opens early in the morning, making it convenient even if you arrive at Tokyo Station early.
Gyoku has also expanded to several locations, so you can enjoy its ramen outside Tokyo Station as well.
