Haruchan Shimbashi Ramen is a Michelin-recognized ramen shop located inside Shimbashi Ekimae Building No. 1, directly connected to Shimbashi Station.
With only about six counter seats, the shop often attracts a line, but its smooth noodles, deeply flavored broth, and generous chashu make it a memorable bowl.

▶ What I Tried
Ramen|中華そば

The noodles are smooth and easy to slurp, and the generous amount of soup makes the whole bowl very easy to enjoy. I also really appreciate how much broth is served.
The soup seems to be salt-based, with a surprising amount of depth. “Depth” can mean many different things in ramen, but here, the balance between the meat-based flavors and the niboshi notes is especially impressive.
The way these different flavors come together almost feels like a symphonic suite, with each element playing its own part while still creating one harmonious bowl (´▽`)
The chashu is also full of flavor, and there is plenty of it.
This is definitely a bowl of ramen that leaves you feeling completely satisfied.
▶ Final Thoughts
Because Haruchan Ramen stays open through the afternoon, you may have a better chance of getting in without a long wait if you visit between the usual lunch and dinner rushes.
The brand has also expanded beyond the original Shimbashi shop in recent years, so you can now enjoy Haruchan Ramen at other locations as well. For example, Ginza Haruchan Ramen is another branch in Tokyo.
If you want to avoid the line, visiting during the quieter afternoon hours may be your best bet.
