A New Take on Iekei Ramen from the Creator of Soranoiro

Kakushinya TOKYO was created by the ramen chef behind Soranoiro, whose restaurants have received Michelin Guide Tokyo Bib Gourmand recognition three times.

The concept is said to be “bringing innovation to Iekei ramen,” with a style designed to be smoother and more approachable than the heavier image often associated with traditional Iekei ramen.

According to the restaurant, the noodles are specially made using 100% Japanese wheat, while the Kakushinya Special comes with several types of domestic pork chashu.

Located inside Tokyo Ramen Street, Kakushinya offers a modern interpretation of Yokohama-style Iekei ramen.

Kakushinya Ramen | 革新家ラーメン

The soup has plenty of umami, but compared with the image many people may have of heavy Iekei ramen, this bowl feels relatively light and easy to eat.

Personally, I actually prefer this level of richness because it is satisfying without becoming too heavy.

You can choose the noodle firmness, but even the standard setting felt quite firm to me.
If you do not usually prefer firm noodles, you may want to keep that in mind when ordering.

Garigari Nikutama Rice Bowl | ガリガリ肉玉丼

The Garigari Nikutama Rice Bowl comes loaded with plenty of pork, green onions and a rich egg yolk on top.

The yolk looked especially glossy and fresh, and mixing it with the seasoned pork makes the rice even richer and more satisfying.

It is quite a substantial side dish, so when you eat it together with the ramen, you can expect to leave very full.

Kakushinya is a good option if you want to try Iekei ramen without an extremely heavy or aggressive flavor.

Another advantage is that it opens from 8:00 AM, which makes it unusually convenient for ramen inside Tokyo Station, even earlier in the day.

Tokyo Ramen Street can become very busy, so if you want a more relaxed visit, avoiding the main lunch and evening rush is usually a good idea.
