Shoyu Ramen|醤油ラーメン

A bowl of Kitakata-style shoyu ramen served at KEITO in Shimbashi, Tokyo.

The noodles are smooth and easy to slurp, while the soup is light and easy to drink.

The chashu is tender enough to almost melt in your mouth and is cut into bite-sized pieces, making it easy to eat. The menma is on the thicker side, giving it a satisfying texture.

The shoyu-based Kitakata ramen soup has a well-balanced niboshi aroma that adds depth without overpowering the broth, making it very enjoyable.

Shio Ramen|塩ラーメン

A bowl of shio ramen served at Keito in Shimbashi, Tokyo.

The shio ramen features a simple clear broth with a clean and refreshing taste.

The seasoning is well balanced, giving the soup a light flavor while still making you want to take another sip, and then another.

The flat, slightly curly noodles pair very well with the soup and are easy to eat.

Lunch is naturally busy, but the restaurant also tends to get crowded in the evening with customers stopping by for drinks.

Because it is located just steps from Shimbashi Station, it is a very convenient place whether you want to enjoy a few drinks or simply stop in for a bowl of ramen.
