Although it is located a little away from Shimbashi Station in a quiet area, many customers still make the trip for its refined and delicious ramen.

Access :

Exit Shimbashi Station from the Karasumori Exit and walk straight ahead.
The New Shimbashi Building will soon appear on your right.
Hayashida is located around the middle of the building, only a few dozen meters from the station.

Shoyu Ramen|醤油ラーメン

Korindo Shimbashi Ramen, a refined shoyu ramen served in Tokyo.

The noodles have a pleasantly firm texture, a smooth finish, and a really nice aroma.

The soup has a rich chicken flavor that makes you wonder if they are using especially high-quality chicken to make the broth.

There also seems to be a layer of Japanese-style umami, almost as if high-quality dried bonito flakes or similar ingredients are being used.

The soy sauce flavor is also very smooth, without any harsh or sharp edges.

Every topping feels carefully prepared.

The chashu comes with both pork and chicken, and both are cooked at a low temperature and finished beautifully.

The chicken is made from breast meat, but it is surprisingly moist, tender, and flavorful. Getting chicken breast this soft and juicy is especially impressive.

The menma also has a pleasant bite, with seasoning that is well balanced and not too strong.

One of the nicest touches is the small pieces of yuzu in the soup, which add a fresh accent to the overall flavor.

It is the kind of bowl that makes you want to finish every last noodle and every last drop of soup.

Ajitama Shoyu Ramen|味玉らーめん

If you like eggs, I definitely recommend trying the Ajitama Ramen.

It is basically the regular ramen with a seasoned egg added, but the ajitama itself is really delicious and works perfectly as one of the toppings.

“Ajitama” literally means a seasoned egg. In ramen shops, it usually refers to a boiled egg that has been marinated and flavored.

The yolk is still slightly soft in the center, which makes it even better. Soft-boiled eggs are very common in Japanese ramen, and that slightly runny texture goes really well with the soup.
