Tonkotsu Broth Simmered for More Than 24 Hours
Oreshiki Jun is a tonkotsu ramen shop located inside Tokyo Ramen Street and operated by the Setagaya ramen group.
According to the restaurant, its soup is made using fresh pork bones simmered for more than 24 hours in the kitchen, creating a concentrated and creamy tonkotsu broth.
The ramen is paired with low-hydration thin noodles designed to work well with the rich soup, and the restaurant also offers its own spicy seasoning made with 18 different ingredients.

▶ What I Tried
Tonkotsu Ramen | とんこつらーめん

Personally, I noticed an unpleasant bitterness and pork-bone aroma in the soup.
The flavor reminded me of what tonkotsu broth can taste like when the pork bones are cooked too aggressively and begin to scorch at the bottom of the pot.
Of course, I cannot say that this is actually what happened in the kitchen — it is simply the flavor I experienced.
I thought it might have been a one-time issue, so I visited again on another occasion.
Unfortunately, I noticed the same flavor both times.
For my personal taste, this ramen simply did not work for me.
▶ Final Thoughts
Oreshiki Jun is conveniently located inside Tokyo Ramen Street and opens early in the morning, making it easy to visit while passing through Tokyo Station.
The restaurant itself is well known for its long-simmered tonkotsu broth, so my experience may simply come down to personal taste.
If you enjoy strong, concentrated tonkotsu ramen, you may feel very differently from me — so it may still be worth trying for yourself.
