Elegant Sea Bream Shio Ramen with a Delicate Japanese Flavor

Toka is known for its refined sea bream-based ramen, made with a clear golden broth and specially developed thin noodles.

The flavor is light and elegant rather than heavy, with the natural umami of sea bream coming through clearly.

It is the kind of ramen that feels closer to a carefully prepared Japanese dish than a powerful, heavy bowl.

Tai Shio Ramen & Tai Chazuke Set | 鯛塩らぁ麺と鯛茶漬けセット

A bowl of sea bream shio ramen served with tai chazuke at Toka in Akebonobashi, Tokyo.

The sea bream shio ramen has a clear and refined broth, with a gentle umami and thin straight noodles that match the delicate soup very well.

The rice on the side is also part of the experience. After enjoying the ramen, adding some of the sea bream broth turns it into a light and flavorful chazuke-style finish.

Personally, I tend to prefer ramen with a little more punch, but this set feels very polished and has a distinctly Japanese character from start to finish.

Toka is a good choice if you prefer light, refined ramen with a strong Japanese character.

The sea bream broth, thin noodles and chazuke-style finish make it a little different from a typical ramen experience.

The original Akebonobashi shop has since moved and merged into the current Yotsuya location, but the style of Toka continues there today.
