▶ What I Tried
Chuka Soba | 中華そば

The soup is beautifully clear, with a light and refreshing character, but the seasoning still comes through clearly and gives it plenty of flavor. The chashu has a good amount of fat and a rich savory taste,
while the crunchy menma and fresh green onions add nice texture and balance.
Chuka Soba with Backfat | 中華そば(背脂入り)

You can request the backfat version when ordering. Even with the added backfat,
the original soup is refined and light enough that it does not feel overly heavy, giving the bowl extra richness without losing its clean, elegant character.
▶ Final Thoughts
Tanaka Soba is especially busy during lunchtime, when long lines often form outside the shop.
In the evening, however, it is usually much quieter, so you can often get a seat without waiting too long. If you want to enjoy the ramen more comfortably, visiting later in the day is a good option.
The clear soup is light yet full of flavor, and the backfat version adds extra richness without making the bowl feel too heavy. Whether you choose the regular Chuka Soba or the backfat version, both are worth trying.
