Born in Hakata — Simple, Fast and Full of Tonkotsu Flavor

Hakata ramen is one of Japan’s best-known tonkotsu ramen styles, originally developed in Fukuoka.

A typical bowl features a rich pork-bone broth with very thin straight noodles, green onions and chashu.

One of its most distinctive features is kaedama, where you can order an extra serving of noodles after finishing the first portion.

Simple, fast and satisfying — Hakata ramen is a classic style worth trying at least once.

Iekei ramen was born in Yokohama, and personally, I tend to notice two broad styles.

One focuses on drawing out deep pork-bone flavor, almost down to the marrow.
The other leans more heavily on soy sauce, with tonkotsu adding richness and depth underneath.

And today, many new variations have grown from those basic styles.

That is part of what makes Iekei ramen so interesting.
Try different shops and find the style that suits you best!
